Sweet Potato Muffins

Sweet Potato Muffins

2 eggs -- beaten
1 cup skim milk
1 cup sweet potatoes, canned -- mashed ( you could substitute fresh cooked here)
1 1/2 cups all-purpose flour
1 tablespoon sugar
5 teaspoons baking powder
1/2 teaspoon salt
1/3 cup canola oil -- melted

combine eggs, milk and potatoes, beat until smooth.

Combine dry ingredients, add to potato mixture, blending thoroughly.

Add oil, mix well. Fill greased muffin pan, two thirds full. Bake at 400 degrees for 30 to 40 minutes.

Makes 12 to 15 2 inch muffins.These freeze well
