Day two of Oven Waiting. Ours is being replaced, and the replacement will be here hopefully today . Because of the uncertainty of the time and the fact that I will have people working in my kitchen sometime today, we are planning carry out for dinner. Tricky when trying to keep things healthy and dairy free ( Gluten free will happen once the oven is here). We are going to try a new to us chain- El Pollo Loco. They offer grilled chicken, steamed veggies, salads and several healthy alternatives. It is really nice to discover convenient, healthy alternatives for those times when life happens.
Did get in some walking yesterday and a totally on program day in spite of the endless sitting around and waiting. I was also able to get a lot of paperwork and cutting done for next years school materials, so it was a good day.

That restaurant sounds like it has some great choices!
I've heard of El Pollo, but we don't have one nearby. Hope the oven gets there soon.
