If its Thursday, it's chicken day

Cool this morning. Started off sunny, but the clouds are rolling in. Temps are supposed to start falling this afternoon and by the weekend we are expecting snow showers. Brrr !!!! Strange thing is, I have found that I really enjoy walking in the brisk temperatures. Son likes it as long as he can wear gloves. Flip flops and gloves- explain that logic !

I am adjusting to some of the dietary changes I have to make, such as never eating a carb without some fat or protien, and the result is a slightly different line up for snacks during the day . I think just that change alone could be enough to get the scale moving in the right direction again. This morning I feel as though I have definately lost some weight. I will hold off checking until Saturday's weigh in. Son is looking thinner in the chest and face as well, so I am hoping for a good week for us all. Hubby tends to wear a lot of lose clothes, so it is hard to tell.

Tonight I am making one of our favorite chicken recipies- so easy to do and it comes out so moist ! I make this with a barley or Quinoa side, a veggie and a big tossed salad.



Garlic Dijon "DUMP" Chicken (Lite) 3 pts

Serving Size : 6

2 Cloves Garlic -- minced
4 Tablespoons Dijon Mustard
2 Tablespoons lemon Juice
1 1/2 Pounds Boneless Skinless chicken breast

For immediate cooking: Pre-heat oven to 350 F. Place all ingredients into a
large baking dish, turn chicken to coat. Bake until chicken juices run
clear (45-60 minutes for chicken pieces, or 20-30 minutes for chicken
breasts).

For freezing: Place all ingredients into a 1 Gallon freezer bag. Lay flat
in freezer.

To thaw and cook: Take the bag out of the freezer the night before, make
sure the baggie is completely closed. Place the Bag on a shelf furthest
from the freezer (It works best if the bag is laying flat, although this
may not be the best option with a side-by-side fridge/freezer). Preheat the
oven to 350 F. Empty the contents of the bag into a large baking dish and
bake until the juices run clear (45-60 minutes for chicken pieces, or 20-30
minutes for chicken breasts).

Mmmm yes, I tried this recipe of yours and it is delicious! In fact, I have a batch in my freezer as we speak!

I currently have a pork tenderloin in my slow cooker that I plan on eating with roasted veggies. Unfortunately, my husband is eating his with white beans and rice with corn bread.

I'm still praying that maybe one day his brain will click over to healthy eating. lol

Ohh- can I come over ??? I was just going through the freezer to plan next weeks menu and I found some pork loing chops to use this weekend in my slow cooker, and that made me think about pork roast with apples, and my mouth is watering for it.

With hubby's, would it make you feel better to know that mine eats Bocca burgers, brown rice, tofu, tons of fruits and veggies but will still find an excuse, drive miles out of his way to purchase and argue with me that polish sausage, Italian sausage and triple cheeseburgers with bacon and mushrooms are a good and logical meal choice ??? I reached a compromise with him by making my own sausage out of chicken breasts and buying him Fiber One Bars.But still, if they serve it at work ( they do a lot of company lunch things) or if there is any reason he might have to eat out, he will gravitate to theses like a Lemming o the sea. He recently had a health screening and his cholesterol, glucose and so forth are well within normal range, but I am trying to help him increase the good cholesterol and lower the bad to keep him healthy and around for many years to torment

Gloves and flip flops... I can't explain it but I understand him. A few years ago everyday I wore shorts rain, snow, or sun shine... shorts. People still talk about me for wearing rain boots, a rain coat and shorts... soooooo what! I was comfy... lol
